 Duties and Responsibilities:

The utility/SA is the ultimate support position. The utility busses, cleans, and resets tables for the next guest. The utility supports bartenders and servers with servicing guests in their dining experience, stocking supplies, and running food.

This role is all about being a key part of the team. Our Utility/Support Assistants help keep things running smoothly by supporting the front and back of house. It’s fast-paced, hands-on, and a great fit for anyone who enjoys staying busy, working with people, and being part of a strong team.

What You’ll Do:

• Clear and clean tables, then reset them for the next guest
• Stock ice, glassware, and bus tubs for the bar
• Keep server stations stocked with plates, napkins, utensils, and more
• Run food and drinks from the kitchen to tables
• Put away clean dishes and bus dirty ones in a neat, organized way
• Learn the basics of the menu and how we take care of guests
• Help refill waters, pre-bus tables, and step in where needed
• Be a team player—supporting servers, bartenders, and the kitchen as needed
• Help with general upkeep like sweeping, wiping down tables, and restocking supplies

The host is a friendly and energetic team member. The host provides guests with their first and last impressions of Mission Taco Joint. They are responsible for controlling the flow of the restaurant and for managing the waitlist.

• Responsible for maintaining a presence at the host stand
• Seat guests at tables by following a fair rotation and a floor chart set forth by the Manager on Duty (MOD)
• Answering telephone calls and fulfilling those calls as necessary
• Develop and maintain a comprehensive knowledge and understanding of MTJ and its standards, procedures, products, and services
• Manage the waitlist for the restaurant when necessary. Accurately quote wait times
• Anticipate the guests needs or preferences by recognizing facial and indirect cues
• Listen to guests, understand their needs and concerns, do your best to accommodate
• Communicate openly, clearly, and positively to guests, co-workers, and managers
• Maintain contact with the serving staff, kitchen staff, management and guests to ensure that dining details are handled properly, and customers’ concerns are addressed
• Protect guests and the establishment by knowing and following sanitation, safety and alcohol control policies

The Dishwasher is responsible for ensuring the cleanliness and sanitization of dishes, tableware, glassware, pots, pans, and utensils through manual and machine cleaning methods as well as keep the dishwashing area clean and safe.

• Develop and maintain a comprehensive knowledge and understanding of MTJ and its standards, procedures, products, and services
• Scrape, rinse, and load dishes and utensils into dish machine
• Wash and sanitize all pans, utensils, and dishes
• Clean, sanitize, and maintain dish machine
• Unload dishes and utensils from dish machine and organize them properly
• Empty trash containers regularly
• Maintain a clean work area and kitchen by sweeping and mopping as needed
• Perform additional cleaning duties as requested
• Clean food prep stations and equipment

The Line Cook is a professional cook whose job is to produce all assigned menu items in an efficient and consistent manner while following the specifications, recipes and techniques of the company. 

Duties and Responsibilities:

• Develop and maintain a comprehensive knowledge and understanding of MTJ and its standards, procedures, products, and services. Stay up to date on off menu products, specials, etc.
• Sets up and stocks food items and other necessary supplies
• Prepares food items by cutting, chopping, mixing, and preparing sauces
• Cooks food items by grilling, frying, sautéing, and other cooking methods to specified recipes and standards
• Maintain cleanliness and complies with food sanitation requirements by properly handling food and ensuring correct storage
• Inspect, clean, and maintain food preparation areas, such as equipment and work surfaces, to ensure safe and sanitary food-handling practices
• Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, fryers, roasters, coolers, freezers, and other kitchen equipment
• Knows and complies consistently with the restaurant’s standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
• Closes the kitchen following the closing checklist for kitchen stations and assist others in closing the kitchen
