Job Summary
Join our growing bakery concept , Philadelphia's first artisan bread company, as a Kitchen Manager. In this dynamic role, you will lead daily production in our high-volume wholesale bakery and café kitchen. This hands-on leadership position is tailored for a baker-forward culinarian who excels in fast-paced environments and is dedicated to quality, craft, and team development.
Key Responsibilities
- Oversee all kitchen and production operations for the wholesale bakery and café kitchen.
- Lead, schedule, and mentor a skilled team of bakers, pastry cooks, and prep staff.
- Manage daily bread and pastry production to fulfill wholesale orders and café demand.
- Maintain and enhance bread and pastry programs in line with Baker Street's artisan standards.
- Ensure consistent execution of sourdoughs, European-style loaves, rolls, and café pastry offerings.
- Monitor and manage food costs, labor costs, ordering, and vendor relationships.
- Uphold rigorous food safety, sanitation, and HACCP compliance across both facilities.
- Collaborate with ownership on menu development, seasonal specials, and production innovation.
- Identify opportunities to improve efficiency, yield, and quality in high-volume production.
Requirements
- 3 years of progressive kitchen or bakery management experience in a high-volume setting.
- Deep hands-on expertise in artisan bread baking, including sourdoughs and European-style loaves.
- Strong pastry skills, including viennoiserie, café pastries, and scratch baking.
- Experience managing wholesale or commissary-style production is a strong plus.
- Proven ability to lead, coach, and hold teams accountable.
- Solid food cost and labor management skills.
- ServSafe certified (or willingness to obtain).
- A passion for craft baking and respect for quality ingredients.
- Strong organizational skills and ability to thrive in a high-output, early-morning environment.
